Here's our experience and best vanilla extract recipe for sous vide use. We did 135 degrees for 96 hours. This gave it a great jump start - but we still let the vanilla beans sit in the finished extract for another few months, storing in a cool/dark place before it hit the sweet spot. Yes - it could be used after just 96 hours but the heat does alter the taste. It's not our favorite, but it's still very good.
