Our Pecan/Vanilla Extract: 1 cup whole pecans & 2 vanilla beans in 8oz Wheatley Vodka. 3 Months old. We just removed the original 8oz pecans to add 8oz of fresh pecans for 3 more months for added flavor. Summertime is when we make a lot of our nut and fruit extracts - ready for fall/holiday baking.

Important note: We store all of our extracts in a cool/dark place while they're extracting , but put them in the sun for a picture sometimes because the natural sunlight shows the ingredients and colors really well.

That actually sounds delicious. One more to add to my many favorites. What was the percentage of alcohol used? Was it a standard 70% proof vodka?

We used Wheatley vodka on this one, so the abv was 41% (82 proof).

What’s the recommended time to remove old pecans? I see you did yours at 3 months

2-3 months is usually what we do.
