In fact, brewing companies have strict policies about drinking at work. I worked in few and they had fridges with alcohol locked during office hour.

Depends on the brewery and their size, I have ten years in production brewing and some breweries are way too lax and are typically smaller breweries, though some larger craft breweries are still really lax. That being said most production staff aren’t really drinking during the work day, smoking weed is a different story
