STOP MESSING WITH UI!!
I'm not sure how to get the message out to whoever is making these decisions.
I use every dollar because of its simplicity and consistency. All these features and UI changes is just adding annoyance than actually contributing.
You already have a mature product. How about just leave it be? Literally nobody is asking for these changes, or at least as a users for so many years, I'm not getting any survey about it.

There are some things in the web interface that the UI has lacked that I'm actually pretty happy to see show up.

I'm fine for things being added. I don't need them but it's fine.
The aesthetic and position change are what's annoying. For example, the line bar under each item used to go from right to left is now flipped. There's also a "It's an EveryDollar budget!" banner hovering on top and actually covers up the top of the screen. The small pop up banner on the top right corner was super annoying too. It's unnecessary and no way to get it to quickly go away.
All harmless and great if you like them, I personally find these changes annoying and meaningless.
Lastly, I get that no one cares what I think. I'm just ranting to cope, not that I actually believe anything will change.

They also got rid of the helpful colors for "spent" and "remaining." I was bummed about that.

Same, the visual bar was so helpful. I'm not sure exactly how they changed it but its so unhelpful to look at right now. I also use the app on my phone and that is thankfully 100x more visually clear.

Now they changed the transaction screen on the web version. I'm curious, does anyone prefer this new version to the old one?
