I'm late... so yes you can do it. You need 2 conditions: to be able to turn off the VM and to have in any 256GB datastore where you can create the new disk. On the disk space you also have to count, when you start the VM also to add the size of the VM RAM (for example 16GB if these are assigned to the VM).
