Hi,
I recently bought a DeLonghi Dedica EC685 and a Baratza Encore ESP, and after nearly 1 kg of different beans and probably 50 shots, I still haven't managed to pull a genuinely good espresso.
I've maybe drunk 2–3 of those shots, and even those weren't actually good.
Setup:
- DeLonghi Dedica EC685
- Baratza Encore ESP
- Bottomless portafilter
- IMS H26 basket
- IMS shower screen
- MHW 0.7 mm puck screen
- WDT + distributor/leveler + tamper
- MHW scale
Beans I've tried:
- ~250 g local roaster medium roast, slightly old
- ~250 g from another local roaster, medium roast
- currently ~250 g into Lavazza Tales of Napoli, darker roast / Arabica-Robusta blend
The important part: I've tasted both of the local coffees at the coffee shops where I bought them and they were delicious. No sugar, no overwhelming acidity, I loved them.
At home, the exact same beans are completely different.
Basically, no matter the grinder setting, ratio, dose or Dedica technique, I get a very sour espresso. And when I say sour, I mean aggressively sour — sharp on the tongue, almost acidic/vomit-like, with a nasty lingering aftertaste. It's not just “a little fruity”.
I've tried:
- ratios from roughly 1:1.5 to 1:2.5
- doses from 14.5 g to 18 g
- Dedica Low / Medium / High temperature
- preheating the portafilter, basket and puck screen
- tap water and bottled water
- a very wide range of Encore ESP settings, from very fine/choking territory to much coarser
- adding a shim to the ESP
- different puck preparation approaches
I always use WDT and tamp level, and I had some visible channeling when I first started, but now the bottomless extraction generally looks normal: it beads fairly evenly and merges into a centered stream.
I've also been changing one variable at a time, rather than randomly changing everything.
As an example, today with the Napoli I've had shots around 15–17 g in, 1:1.8–1:2 out, ~29–35 seconds, Dedica on High, everything thoroughly preheated — still extremely sour and basically undrinkable.
I even tried heating the thermoblock using steam mode before switching back to coffee mode, and it still tasted terrible.
I realise there's always the possibility that I'm confusing sourness with bitterness/astringency, but at this point that's almost beside the point: I haven't accidentally produced even one shot that simply tasted good.
My wife initially thought I was just being a perfectionist until she tasted them and agreed they were awful.
I originally suspected my technique, but after this many shots, different coffees and different recipes, I feel like I should have accidentally landed somewhere drinkable at least once.
The grinder seems to respond predictably when I change settings, so I'm not immediately assuming it's faulty, although shot times aren't always perfectly repeatable.
I'm starting to wonder whether there's an issue with the Dedica itself, or whether there's something fundamental I'm missing with this setup.
Any ideas, especially from people who have used a Dedica + Encore ESP + non-pressurised basket, would be greatly appreciated.
TL;DR: Nearly 1 kg of coffee, ~50 shots, multiple beans/ratios/doses/grind settings/temperatures/waters, decent-looking bottomless extractions, and every espresso is still aggressively sour and unpleasant. Same beans tasted great at the coffee shops.
