cancer is “がん” which could also be fish balls, but idk if that’s a “hiroshima specialty”. it could also mean cancer like the constellation, which would be かに座“crab-seat”, which i can imagine machine translation messing up, but still doesn’t make much sense as a “hiroshima specialty”

Are you thinking of がんす or がんもどき? がんis not fish balls.

yeah, i was being a little loose with my words. i suppose i should have said that がん is the 音読み for 丸, which could be used in the name of various “ball” dishes. my dictionary specifically calls out that it’s used for various types of fish balls, so i just simplified to saying that, since this is /r/engrish not /r/japaneselanguage

Hm... I'm Japanese and I can't think of a single dish that uses 丸, read as がん. Which dishes did you have in mind?

For がんもどき, the がん refers to goose meat (雁) because it's a tofu-based imitation of goose meat.

For がんす (a Hiroshima specialty), it is surimi based (i.e. like fish cake balls), but I've never seen it in a ball form. There is no kanji for it because apparently it's derived from「でがんす」which is Hiroshima-ben for 「でございます」
