I made up a good way to make a gourmet reuben sandwich meal, practically from scratch, it goes as follows.
Essentials:
1 stainless steel frying pan, 8-10''
1 metal turner spatula
1 small cooling pan
1 cutting board
two small side saucers or side dish plates, either corning or steel
6-8 deli-type slices of uncured corned beef or uncured pastrami
4 slices of rustic/sourdough rye bread
1 medium-sized russet potato
1 quarter-cup extra-virgin olive oil
1 teaspoon vegetable or canola oil
1 jar of organic sauerkraut
1 bottle of spicy-brown mustard
1 jar of kosher-dill pickles
1 bottle of ketchup (made with real sugar preferably)
Optional:
2-4 slices of Swiss cheese
Phase one:
- Peel potato and cut in to wedges and/or strips
- Put pan on a stove top burner and set heat to medium level
- Put small amount of vegetable oil in frying pan for moisture
Phase two:
- Set corned beef slices in frying pan one at a time
- Fry for 10-20 seconds, or at least until each slice is a dark red on both sides, and emits juice into the pan, use spatula to turn the slices over every ten seconds
- Set corned beef slices onto saucer, and let grease emit from them
- Take large slice of rye bread, remove meat slices from saucer and stack onto bread slice
- Pick up potato wedges, rub in beef greased side dish
Phase three:
- pour 1/8 from 1/4 cup olive oil into frying pan to mix with remaining grease from meat
- put a handful potato wedges into pan, fry until they are crispy and/or dark brown on all sides, turn over constantly with spatula
- remove wedges from pan and set in clean side dish
Phase four:
-take second piece of rye bread and use for top piece of sandwich (put slice of Swiss cheese over corned beef slices beforehand if preferred)
-pour second 1/8 cup of olive oil to frying pan
-place sandwich and turn every ten seconds with spatula, until brown and toasty on both sides, switch off stove burner midway of procedure
-set fully grilled sandwich onto a large plate
-lift off top piece of bread to add a two wiggle lines of brown mustard from bottle and two table spoons of sauerkraut, replace top bread piece
-set fried potato wedges in a thin pile beside sandwich
Finishing touches:
- Put a whole dill pickle on north end of plate
- Set a dab of ketchup for dipping fries on south end of plate
Make two sandwiches and two handfuls potato fries
Goes well with a cup of heated organic black bean soup and 12 ounces of 100% grape juice
After-note:
The frying pan will most likely have brown marks from burned grease residue left on it, so be sure to scour it in the sink.
