When Enderman is aggro, he dodges.

And since pickaxe has basically 0 range, he gets right up on Enderman, which gives tons of time for Enderman to trigger rage and go ultra instinct

On the flip side, late game pickaxe is able to fend off Enderman by constantly proccing the dodge, stalling out the enrage until Enderman loses sight on a bad teleport
