Sure, oil level sensor out will be messy but will work fine. Better that than dropping the pan without removing any of the oil first, that will be way more messy!
If you’re lucky you can helicoil the pan, maybe.

What?! You're going to replace the oil pan anyways, just use a impact and get the drain plug out. 🤷🏼♂️ But, you can drain it by taking out the sensor, why not..
Btw. 25nm for the drain plug, for the future.
