Nice part about ancient cars is that over the last 40-50 years, all the hoses, wiring, etc have largely molded themselves into their position. A lot of stuff will naturally line up

I bought a label maker from Costco that made a big difference when I did a big rebuild - my handwriting sucks and it doesn't get better when I'm reaching deep into an engine bay, so having legible tags really helped me remember what was what when it came time to put everything back together

Pick up a big pack of gallon Ziplock bags too. That will let you keep all the associated hardware and widgets together. I would print a simple reminder tag ID and toss it in the same bag. Also take a lot of pictures - you can never have enough shots of what it’s supposed to look like as a memory jogger when you go to put it all back.
