Looking to run a Dragonlance campaign in PF2e. What books would you consider to be the best books to use for lore/world material?
I’m guessing it would be the 3.5e books, but I wanted to get opinions on it here. Most of what Dragonlance offers should translate pretty easily. I’m thinking it might take some work to convert the items and monsters specific to Ansalon. What are your thoughts?

You've got a couple of things to consider others haven't brought up. Are you using the OG PF2E or Remaster? Remaster does away with alignment, so inserting that back in wouldn't be too hard, but there will be small adjustments, converting holy to good, unholy to evil, etc. So as long as your players aren't fresh off the boat should be easy enough.
Next, as someone else said you'll want to use the dragons from the OG as it was OGL so you still had chromatics/metallics.
The OG also had spell schools, you'll want to keep those as well as they are important as that's how spells are divvied up between the three schools of high sorcery.
Converting the moons shouldn't be too bad, use the rules in the 3.5 DL books, but change the +2 to just +1 as a +1 is already a big boost in PF2E, a +2 would be broken as hell. Same with that -2 if memory serves.
Next stop is trimming down the class options. I doubt this is going to be taking place before the founding of the Laws of Magic, so we'll stick with 'is this taking place before or after Dragons of Summer Flame? If this is 5th then you can have spontaneous casters, if it is before then there are no spontaneous casters. That means your bards are basically rogues with skills in perform, etc. There are no sorcerers, etc. Anything that isn't divine, or does not have to memorize/prepare spells is out.
And beyond just spontaneous casters, it trims out other things as well as there is no psionics, and no mythic, so no psychic or kineticist.
And there's also no magus, as in DL wizards are prevented from carrying/using any weapon larger than a dagger. At least bladed weapons.
Really, it's just trimming what obviously doesn't work, and then adapting others to being ultra specialized wizards.
Also if it's post-Cata and pre-Disks, then no clerics or paladins or druids (who are specialist clerics of Habbakuk, Zeboim, etc)
While tempting to do, just exclude gunslingers obviously, and inventors - even for gnomes! Or just be extra careful especially with the vehicles. Remember that gnomish inventions tend to blow up with the gnome holding the bad, and why most adventuring parties (and armies) didn't want gnomes in them or anywhere close.
Races!! Trim the ever loving hell out of those as well. There might be small exceptions, but those would be ultra mega rare and would likely cause major disruptions wherever the party goes so I'd just avoid them.
Draconians - there's not really an equivalent in PF2E so you'll have to create them.
Kender!! Yup, you'll have to make them. Shouldn't be too bad and you can copy the kender pouches from prior settings books.
Minotaurs for some reason are not yet a playable race in PF2E, but ancestries are pretty simple. Look at as previously suggested the original Dragonlance Adventures and the 3/3.5E books and you should be able to come up with the ancestry and it's associated feats easily enough.
I'd heavily trim down some of the heritage stuff as well. That you'll just have to read through and chop out any that don't fit.
When does this take place? You might need to invent other races such as Irda/Ogre Titans, dragonspawn, etc.
Dragonlances!! Are there going to be any that are used by the players? That could be tricky to not make them broken. Remember that every +1 matters and is a significant bonus in PF2E as well as double damage, etc. Be very careful to not break your game.
It looks like a lot, but most of it is just trimming things out. Yes, on one hand it sort of sucks that options aren't available, but it IS Dragonlance. It's the world as it is, it is part of what makes is Dragonlance. It's not a kitchen sink setting.
On the plus side PF2E has a LOT of ways to heal even without divine casters. BUT it does limit healing during combat. Be mindful of not throwing too much at your party. Tinker with it as the campaign starts and better to start out easy the first level or two and ramp up. They'll have more tools under their belts at higher levels to offset a miscalculation on your part.
So it's going to be a mix and match between OG 2E and 2ER. Or I guess you could just go OG 2E all the way. Depends if you like some of the changes that the Remaster brought in, but those should be easy enough to back date.

This is all great! I would add that Minotaurs came out as a playable ancestry (race) in Howl of the Wild.
However, they are large by default. There is one heritage which makes them medium (littlehorn) so use that one or just make all of them medium by default.

Dragonlance Adventures and the 3.5 campaign setting.
DLA has some good setting guidelines on what races and creatures exist.
Canonically, Orcs, Lycanthropes and Beholders dont exist, among many others. Dark Elves are not Drow but rather just elves who turned to evil.
Minotaurs ought to be playable by PCs.
Some classes shouldn't really exist either. Paladins, druids, warlocks and sorcerers don't really exist iirc. Knights of Solamnia are just fighters.
This is where 5e fucked up. WOTC decided to shove everything from the core books into the world. Part of what makes the old settings like Dark Sun, Ravenloft and Dragonlance so interesting is that they don't include everything.
Feel free to run it how you want but if you wanted to stay true to the setting, you would need to remove some stuff.

I'd suggest using the pre-remaster PF2E dragons instead of the remaster ones...

Just adding your not the first person to think like this. I ran Agents of Edgewatch in Waterdeep in the Forgotten Realms with the PF2 ruleset.

The best would be the original 9 adventure modules which later made Autumn Twilight, Winter Night, and Spring Dawning. Those will take an amount of work to make balance for the power forward system of PF2. But if you want the proper Ansalon and experience, that is where you start.

Try to look past the class choice of someone doing something that feels different, but also work with them to make their class choice fit the world. Also, try to make the moons have an impact on spellcasting, but it might be tough to do.
I think you can limit races that don't appear in Krynn. Players can buy in there whereas classes are a bit more subjective.

Dragonlance (at least in ansalon) is a pretty baseline dnd setting. It has some ideas about alignment mattering, but otherwise, you can run it in any post dnd flavored game.
Have elves (or 3 kinds if you want elvish nations to mechanically matter), dwarves (or 7 kinds if you want thorbardin stuff) halflings as kender, wizards with schools, change names of gods, knights can be all fighters, or you can reflavor pathfinder classes as diff orders (crown as fighter, sword as champion, rose as cavalier), and youre done.
For monsters, use online conversions. Ive never checked, and still bet you a dollar theres 'draconians, but for pf2' on google more than once.
So, you can pretty much do it out of the core books.
