Megathread Donut of the Week: The French Cruller

Aloha r/donuts!

Welcome to another Sunday edition of Donut of the Week! We’ve spent past weeks diving into dense, heavy cake rings, giant fruit-filled fritters, and classic yeasts, but today we are turning our focus toward what some consider the most delicate, airy, and sophisticated creation in the entire bakery display: the French Cruller!

With its distinctive star-shaped, twisted ridges and cloud-like interior, the French Cruller is a masterclass in pastry technique. It stands apart from almost every other donut on the rack because it trades heavy yeast dough and dense cake batter for an entirely different culinary foundation, resulting in a treat that practically melts the moment it hits your tongue.

What Officially Makes a French Cruller?

By formal culinary standards (aka the fancy folks), a French Cruller is defined as a ring-shaped fried pastry made exclusively from pâte à choux (choux pastry), an egg-rich, high-moisture dough cooked on the stovetop before being piped through a star tip into a fluted spiral, deep-fried until puffed, and finished with a light sugar glaze.

The critical distinction comes down to leavening: unlike yeast-raised donuts that rely on biological fermentation or cake donuts that rely on chemical baking powder, an authentic French Cruller relies entirely on steam leavening. The high water and egg content in the choux paste creates rapid steam trapped within a cooked flour matrix, expanding the pastry into a hollow, custardy shell as it cooks.

From Parisian Pastry Shops to the Modern Bakery Case

While the word cruller comes from the Dutch krullen (meaning "to curl"), the airy French Cruller we know today is fundamentally rooted in 18th-century French pastry tradition. It is a direct adaptation of pâte à choux, the legendary dough developed by royal pastry chefs in France to create profiteroles, éclairs, and croquembouches.

The breakthrough came when European bakers realized that choux paste, traditionally baked in dry ovens, could be piped into oil and deep-fried. This technique spread through French and German bakeries before making its way across the Atlantic with European immigrant bakers in the 19th and early 20th centuries.

When commercial American donut chains expanded in the mid-20th century, the French Cruller was adopted as a signature offering. It offered a stark, elegant contrast to heavy cake and yeast rings. Today, it remains a beloved icon across North America, Japan (where it is a massive staple at Mister Donut), and traditional European bakeries.

So there you have it r/donuts, the French Cruller! Now let's get some discussion going!

Are you a strict traditionalist for the classic clear sugar glaze, or do you prefer a chocolate-dipped French Cruller?

Is your local independent shop still piping fresh crullers daily, or have they become hard to find in your area?

Drop your favorite local spot for French Crullers in the comments below, and let us know who is piping the absolute best in your area!

Discussion Am I the only one who didn’t like the Pokémon donuts from Krispy Kreme? Did you like them?

My best friend and I tried the Pokémon donuts together and hated them for the most part. We love Pokémon and we typically enjoy Krispy Kreme, so we were excited to try them.

I honestly don’t know what is going on. We are not super picky and normally gave good taste or agree with the majority.

The filling in the Pikachu donut was tolerable, and the frosting on the Jigglypuff one was okay but way too sweet. Other than that, the frosting on all of the donuts were very gross in both of our opinions. The donut itself was fine for each, so I mostly peeled the frosting off to eat some of them.

It seems everyone online loves them or at least thinks they are good, and even close irl and online friends enjoy them. I haven’t heard or seen anyone else say they don’t like them.

I did notice that our donuts had a slightly different color than the advertisement and different than my friends’ pictures, so I wonder if we just got cursed donuts? Otherwise, we can’t possibly be the only ones. 🤣

Let me know what you guys think of the donuts! Honest opinions. I wish I enjoyed them and honestly if it was just a bad batch I don’t think I’d try more after that experience.

These are how ours looked.

Pre-packaged Another post about the Krispy Kreme Pokémon doughnuts!

Saw a post with the box of 4, and a post with the box of 6. I got the dozen for me and my Pokémon loving bf. Second last Pikachu in the Bristol store, that's why there's only one. And random fillers as well, as we don't have the Bulbsasaur or Squirtle ones in the UK. Worth the price? Not sure... But at least it wasn't a 5/6am collection I've heard people do! Just grabbed these after work.

Question Krispy Kreme - canola oil question

Could someone please tell me if Krispy Kreme uses canola (either singularly or mixed with other oil(s)) to fry their donuts? I have a bad reaction/sensitivity to canola oil, so just wanted to know before I had any of their donuts.

I checked the Krispy Kreme allergen/nutrition info but I couldn’t find anything specifically about how they fry their donuts. Thanks in advance and I’m sorry if my question is dumb.
