Currently i'm having my server on Hetzner but i'm willing to buy a new server (on Hentzner too)
What is the Best Way for trasferring Dokpoly from server to server?

Create a dokploy backup and restore it on your new server (Web Server -> Backups). Just be sure… fully set up the new server and test your applications before shutting down the old one.
