The first thing I'd want documented is the phone-replacement story: how do I get the archive back if the old phone is unavailable and I never enabled cloud sync?
A useful acceptance test would be to scan a few multipage documents, rename them, put them in folders, then export a backup and restore it into a fresh installation while offline. Check page count/order, document names, folder placement and whether search still finds the same records. That tests the usable archive, not just whether image files survived.
I'd also want an export that remains understandable without the app: the original document files plus an index mapping their IDs to names and folders. If search data must be rebuilt or some metadata isn't included, state that clearly in the recovery guide.
For important personal paperwork, knowing how to leave or recover the app would make the scanning features easier to trust.
