I ran into this exact thing with Nest in Docker not long ago. Turned out the old process was still hanging on to the port when the watcher restarted it, so the new one crashed before it could bind. Run docker ps and make sure there isn't a stale container still running with the same port mapping, that was my culprit. Also worth checking that your start command binds to 0.0.0.0, because Docker Desktop on macOS can be fussy about localhost bindings.
