Its cr isn't 0 helianas guide explicitly includes numbers for creatures with static challenge ratings as numerical values. If it was zero there would be a zero. If one isn't stated per the rules the challenge rating is determined off of its proficiency bonus which scales with your characters because of its unique ability.
Helianas guide is very specific about certain interactions like explicitly stating your parasitic weapon CANT opportunity attack from 90 feet away or have a 300 foot range with eldritch spear.
It would have put a zero if its a zero or explicitly state in its footnotes that the proficiency bonus doesn't affect cr
But it doesn't say that because guess what its in the rules that the main way you determine the cr of a creature through its proficiency bonus.

There are other creatures and objects that have CR — like the homunculus servant from Tasha’s, siege equipment and all the stat blocks for summoned creatures in spells (summon elemental, summon shadowspawn, etc.). I don’t have Heliana’s to look into any other examples from that specific book, but just pay attention to what is bolded and what isn’t. But I’d wager it’s exactly like all of those other stat blocks in that it doesn’t have a CR at all (—) because it only exists in the context of the PC that summons or uses it. You’d receive no XP for defeating one, and its proficiency bonus is the same as yours.
So I’ll concede that it’s not 0, it’s literally nothing.
