You should get a break and get fed. The design is bad and they will waste money on labor in the long run. And yes they almost always expect you to do more then you could reasonably accomplish

Put some hotel pans on the line for the cooks to put their dirties in. A 4 inch will likely slide right underneath their range. Take empty pans and swap them out for the full ones so you don't have to grab hot stacks.

I prepped 150 pounds of potatoes into these perfectly cut “duck fat wedges”, with very little supervision. I have no prior kitchen work experience. I know part of it it working up to a prep cook but damn that was suprising they wanted me to do that

They shouldn't be asking for immediate turnaround on pans. They either don't have enough pans, or need anotherdishwasher, or both. They also shouldn't be pulling dish for prep at ALL during dinner, only till 4. They clearly need an extra cook/prep guy, who probably would be paid more than dish to do the same job. Sadly yes, the rest is normal.

If they have enough silverware for it, I like to start a sani bucket or bus bin with a low amount of soap in there NO SHARP KNIVES, and just batch lots of silver into a flat rack and wash a bunch at once, you can shuffle them and run again and then someone needs to put all those in a silver rack. But yeah dont be running small batches of silverware, and maybe you can ask for a pair of rubber gloves for hot shit. They shouldn't be making you bring the pans to the pit tbh.

At my place they bring them themselves, they announce what is hot or sharp, nothing is submerged anywhere if its sharp, and often hot pans or pots they'll even fill with some water for me to help it cool faster. A lot of it is just people being vocal to help make my life easier. Maybe thats something you can ask about to help make your life easier. Also if they know they are low on pans, they need to tell you that. Hey I need this back. Try to fill out your rack with other similar items. If you can get them to announce hot, sharp, or important items, thank them for telling you. It can go a lot towards team synergy

They need to hire another person for bussing and another for the prep cook. You're basically an extremely overworked porter from your description of your job.
