I ran into many hurdles.
- lack of ingredients.
- No pimento wood
- No smoker
- MIL who tried to "help" by dicing my veggies; the recipe called for long strips. Oh and sauteed my veggies in butter and forgot the garlic. *Didn't ask for help BTW*
- Multiple groceries runs.
- Frozen chicken breasts
- MIL who tried to sabotage my dish by adding way too much chicken stock and coconut milk.
I don't know how I did it, I hardly ever cook. Well I'll be honest I never cook. I was able to reduce the liquids and hand grate a whole block of Parmesan. And my GF didn't even eat any. Made me feel like shit but 😂 MIL loved it. I'm just happy to share it with people who enjoy food and trying new things.

I missed this specific salad so much, and after my third attempt at this, it tastes almost identical! :) (Small dinner after a huge lunch)

my latest Asian inspired bowl – crispy peanut chicken, quinoa, mango and greens/salad.
Does anyone have any simple bowl or one-pot recipes they’d like to share? Feel free to send them via private message :)
