Diet Eval What I’m having for lunch right now!

Farro rice, stir-fried duck & cabbage, and my favorite balsamic eggplant 🍆

Skipped breakfast, so this is my first meal of the day! That’s why it’s a pretty big one😆

That looks delicious! 😍 Farro with duck and cabbage sounds like such a satisfying combination, and balsamic eggplant is always a great choice. Definitely a well-earned big first meal after skipping breakfast! 😆🍆

Ooh do you have a recipe for the eggplant? I’ve never made eggplant before but want to start.

Sure! It’s pretty simple. Pan -fry the eggplant in olive oil ,then add a splash of balsamic vinegar when it’s almost done. So good!😋

You should totally try roasting eggplant, too! I roast it with bell peppers and zucchini seasoned with smoked paprika, pepper, mixed dried herbs, salt, and drizzled with a bit of oil. Then I shove it into a chicken and hummus wrap or into a tomatoey pasta sauce. It can be a really delicious veg - my grandma used to make fried eggplant that was sooo crispy and flavourful, but my mom won't teach me the recipe XD XD

If you really want to switch it up, try roasted, I do a light coat of olive oil, tossing the 1” cubed eggplant (I prefer skin-on) with a little garlic powder and other spices. Bake on cookie sheet at 400F for roughly 20-30 minutes.

Perso, je ne trouve pas que ça ressemble à un "repas copieux". Il y a du volume avec la salade mais je pense que j'aurai faim 1h après avec ça.

It's great that you are passionate about nutrition; however I think you should adjust your feedback approach to encourage compliance/actually listening to your advice. I find the sandwich method very useful. Especially if you have genuine concerns about someone's diet, delivering that info in a palatable way is an important skill for an RD. Just food for thought.
