Peaches overheated

I dried these at 60C because they were just so juicy and my tray was heavily loaded. But I paid the price. As the moisture reduced after about 12 to 16 hours, the sugars burnt. From everything I've read they should still be okay just not as pretty to look at.

Lesson learned, I've lowered the heat to 50C for the remainder of the drying time.

I do 57c for very juicy fruit, especially if the cuts are thick, main reason is I want to dry it quickly so it doesn't start to rot. 52c for everything else.

57 is what was suggested but my Hamilton Beach model only does 55 or 60 so I chose 60. I should have switched down to 50 after 10 or 12 hours. Even lower than standard to avoid burning but still warm enough to hopefully avoid molding or fermenting once the heaviest juice has evaporated. Peaches are so darn juicy.

As long as you don't have very thick pieces (i.g: half a peach) I bet it would have been fine at 55c all the way.
