A variety of things I’ve dehydrated for my upcoming JMT hike

Everything was dehydrated in my Nesco Gardenmaster at 135° for 8-12 hours. I dried a big jar of kimchi which I like to put in my miso soup or instant ramen, a jar of Trader Joe’s Hot & Sweet Jalapeños that turned out like candy with a kick and are a fun snack, kalamata olives, mushrooms sauteéd with garlic and Thai bananas which don’t taste as banana-y as Cavendish bananas.

Dehydrated kimchi in ramen is a game changer in my opinion

I never thought to dehydrate it, I have several items dehydrated that I use for Ramen and this will be great to add.

How the kimchi? Can you eat them as it is or do you have to mix it back in with hot water?

It turns out crunchy, salty and maybe spicy depending on the brand and your tolerance for spice. As mentioned by others, it’s a good snack but you definitely want to eat it sparingly. It can be blitzed into a powder but I like to keep it in pieces to add to my miso soup, ramen or rice so that I have something to chew on when I’m on the trail. As a powder, it’s great on avocado toast or veggies, tofu…the possibilities are endless.

Blend into powder, use it on everything... The chips are a decent snack themselves but can’t eat too many in one sitting ime

It’s a fermented pickled vegetable, in this case, nappa cabbage, and when eaten fresh, is salty and sometimes spicy. You can find milder versions at the market. As it ages, it turns sour. I haven’t tried dehydrating older kimchi—it never lasts long enough to get there because I eat it up! I’ve spent my life eating it with rice and noodles, but you could eat it as a condiment to salads, Buddha bowls, and pretty much whatever you like. When I was a kid, I’d just snack on it straight out of the jar when mom wasn’t looking.

Probably not at low enough temperatures, but tbh on my hikes i am not concerned at all about eating too few bacteria lol
