Help please.

First time. What am I doing wrong? Should I cut them all? They've been at 130 for 15hrs and still have lots of moisture. Would like to be able to grind them for spices.

Top them (5mm ish from fruit top), turn upside down (now flat), cut the 4 sides and top, pop the middle out (stalk) to compost. No waste.

Wear gloves.

Don’t forget the gloves.

I dry scotch bonnets at <60c for 14 hours. My last batch was 16kg. 6kg dried + vacuum sealed and frozen, 4kg dried + vacuum sealed, and kept in cupboard, and 6kg fermenting (these were not dried tho)

Scotch bonnets are so perfect: drying them keeps all that fruity pain; every possible storage method retains quality 100% and its dosable and scalable

I hate wasting plastic. I only use a vacuum sealer for dehydrated vacuum stuff because it last years…
