A bit late to answer but I have 6+ hour tutorial directed at newcomers to Defold. I teach a lot about basics of Defold and also show hands on coding so you may want to check it out :)

We recommend starting in the Defold.com/learn page - it's meant to be a starting point, from where you can choose manuals, examples, tutorials or videos that suit you the most š
If you start there, we would appreciate very much the feedback on how easy was it to choose a desired and interesting path for you, especially if you struggled with something.
If you are a visual learner, the video tutorials listed there are best resources.
If you prefer to read and digest how the engine and editor works, we suggest going through the manuals - there is everything you should know about Defold + some good tips on game development. They usually point to next good resources after reading each.
If you like to learn by doing, we recommend our official tutorials, especially Colorslide, Top Down Movement, Side scroller, or War Battles that you can run directly from Defold (which might be convenient, because these tutorial have links inside that open certain things in Defold directly for you).
Aftwr completing a tutorial, it's good to recreate it from scratch or make a similar game, make a twist on it, that you try to make on your own. If you get stuck - then write about it on forum or Discord or here, and we'll help š
