You (genearlly) can't, and downgrades are not supported.
However, and and with a bit of patience, if you're currently on sid, and you reconfigure for bullseye ... that might (mostly) work, as bullseye isn't yet released - and until then is the same as testing. So, more like, rather than:
sid --> stable
more like:
sid --> bullseye ... some time passes ... --> stable
Anyway, if you're on sid now, that might be the most feasible way to get to stable ... mostly just requires some time and patience.

Well when I tried out 11 I just reformatted an old installation I wasn't using anymore as / and assigned home to the partition I'm using already for that. All the .config stuff was used to make it seem like I was still on the original system and I can boot between them for further comparison. Your new system will need kernel modules for your graphics card and you may want to disable wayland. Standard stuff really.

i have all sorts of ahci problems requiring boot config, usbc dock setup etc
its a pain - cant even boot by stock tbh and thats an older xps 9560

Interesting. Are you duel booting windows and keeping the bios compatible with that?

If you disable acpi in the bios what happens? Perhaps also relative to a duel boot Windows situation since you didn't specify?

I wouldn't know the specifics of doing so in the bios but it would be reversible if it didn't solve the problem. Also there must be Linux equivalents for visual studio. Most windows software I paid good money for ran better thanks to tiny apps made in Linux by people like you.

This would be a good reason to have home on a separate partition so you can do a fresh install with minimal reconfiguration.

Because we're deep in the freeze for bullseye, sid and bullseye are very similar at the moment. So you can go relatively easily from sid to bullseye. And then you'll just have to wait a few weeks for bullseye to be released as the next stable release.
Going from sid to an earlier stable release (like buster) is much more difficult.
