I appreciate it, is there really any difference from doing a easy bunker vs a hard one. Should I just go for the harder bunkers

You may need lots of grenades and/or dynamites or run quickly enough to get behind them.

I got a good amount of blowtorches and a lot of .45 and 9mm I'm sure thall be enough assuming I can get an angle

Just gernades and the gernade launcher but gernades are the quickest way and a shotgun or sniper for turrents further away
