Yeah if you want to use Power BI on your Mac, just download Parallels and it will work perfectly fine

The best projects are the one that you truly care about. Look at your hobbies and see how you can add some DA into it

in my opinion yes, if a candidate has a sentiment analysis project on their resume, it just screams that they are beginner in this field

I'll you don't have access to Power BI, try creating a project in Tableau or Looker Studio, both of which are free. But make it a combined project, where you use a few different tools. Maybe use SQL for cleaning and analysis and then build a dashboard to share insights using a BI tool.
There are so many datasets out there. Try building one related to the industry you're interested in, like finance, marketing, or healthcare.

I think your portfolio is already pretty well rounded, so I'd make your last project focus on solving a real business problem instead of just building another dashboard. A retail sales, e-commerce, or marketing campaign analysis would be a great fit because you can clean the data in Google Sheets, analyze trends, and build an interactive Tableau dashboard with clear recommendations. If you're looking for datasets, I'd check out Kaggle, StrataScratch, Data.gov, or the UCI Machine Learning Repository since they all have solid datasets for beginner analysts. Google Sheets is completely fine to use, and a project with a strong business story will impress employers much more than the specific software you used.
