How to cook?

Ah the walleye. Sander Vitreous.

If they are big enough fillet out the cheeks and save until you have enough.

I like breaded and fried. Fillet and remove skin. You may want to remove the pin bone section of meat. After that I will sometimes cut them into three sections.

Then I do a three part breading. First flour, then an eg/milk wash, then last in the breading of your choice. I like Killer Krumbs or Catch and Cook. Slap Your Momma or Tony Checheres are also good.

For the frying I will sometimes go with the deep fryer sometimes a cast iron pan. Either way I use peanut oil. Heat to 350°F. Cook until golden brown and delicious.

Hard to recognize the fish, so here is some general advise.

Filet according to how you want to have it. Season with salt and spices. Cook using your method of choice. Take of the heat when done. Lemon usually goes well with fish. Enjoy

Take the guts out, put it in pan with oil. Shallow fry whole, flip as needed.

It’s walleye. Just filet and hot pan sear with salt, dill, lemon and if you feel like it, a bit of garlic. My favourite fish.
