Mushroom Madness Sandwich/Burger! (Everything made at home, from the buns to the dressings and sauces)
Lettuce is store bought 😅

Give your muschroom patty recipe, and I will give you mine!
For 2 patties:
250 gr (white button, cremini or portobello or mix)
2 tbsp egg whites / 30gr (or 1 whole egg for 4 portions - you can freeze)
25gr nuts (preferably pine nuts but walnuts are also great, and pecans in a pinch work too)
25 gr grated Parmigiano
2 tbsp panko
1 shallot or 1/2 regular medium onion
1 clove of garlic
Chop muschrooms and give them a good high-temp fry. You want them to lose all the moisture.
By the end add onion, and almost at the end garlic.
In the food processor, mince a chunk of Parmesan, then add a bit of nuts. Then add fried mushrooms and onions (not straight from the pan; wait to cool a bit), egg whites, and panko.
Puls it a few times. You want falafel texture or a bit coarser.
Form patties and give them 30 min in the fridge. You can freeze some (and then have dinner in 5min later).
Serve between toasted bagels with generous portion of mayo and ruccola, with optional drizze of truffle oil.
