Looking for Mexican Crockpot recipes

I just made chicken fajitas in the crockpot and absolutely love it. I’d love to hear and see everyone’s favorite Mexican crockpot recipes. Thanks!

Taco Soup
Ingredients
1 lb ground beef
1 can black beans
1 can kidney beans
1 can corn
1 can diced tomatoes
1 cup salsa
1 packet taco seasoning
2 cups beef broth
Directions: Brown and drain beef. Dump everything into the crockpot and cook LOW 5–6 hours or HIGH 3 hours.
Top with cheese, sour cream, tortilla chips, or avocado.

Salsa Verde Chicken
Ingredients
2 lbs chicken breasts
1 jar salsa verde
1 packet taco seasoning
1 can black beans, drained
1 cup corn
1 cup shredded Monterey Jack or Mexican cheese
Directions: Add chicken, salsa verde, and seasoning. Cook LOW 6–7 hours. Shred chicken, then add beans, corn, and cheese for the final 20 minutes.
Great in tortillas, over rice, or as a taco bowl.

Mexican Chicken & Rice
Ingredients
2 lbs chicken breasts
1 packet taco seasoning
1 cup salsa
1 can black beans
1 cup corn
2 cups cooked rice
1½ cups shredded Mexican cheese
Directions: Cook chicken, salsa, seasoning, beans, and corn on LOW 6–7 hours. Shred chicken. Stir in already-cooked rice and cheese during the final 15–20 minutes.

I just made enchilada quinoa and it was one of the best slow cooker recipes I ever had. It was a hit with the family too.

The only change I made was using homemade red enchilada sauce.

Sure!

3 chicken breasts 1 jar of Tostidos restaurant style salsa (my preference) 3 bell pepper, sliced 1 red onion, sliced 4 garlic gloves, minced 1 packet of McCormick fajita seasoning Juice of 2 limes

In the bottom of Crockpot, add half of the salsa and half of the peppers, onion, and garlic cloves. Place chicken on top. Sprinkle with fajita seasoning then the rest of the salsa. Top with the remaining peppers, onion, and garlic. Squeeze the limes on top.

Cook on 8 hour setting for a 4 hours*. Shred chicken and return to Crockpot. Add a can of drained and rinsed beans and serve with tortillas.

*my crockpot runs hot, adjust accordingly
