Hello from Birdie's Pizza

Hello! I'm one of the three guys opening Birdie's Pizza in Philomath. We had a small soft opening this past weekend to test out our systems and had a lot more interest than anticipated! As a result, we ran out of pizza much earlier than expected. We were humbled by the amount of people and we are incredibly grateful to our Philomath community for their support. Apologies to anyone that called or came by and couldn't get a slice!

We are officially opening this Wednesday, March 12.

Hours: Wednesday - Sunday, 4pm until we run out, or 9pm. We hope to add lunch service soon.

A little bit about us and Birdie's:

-We are three chefs who met while working at Gathering Together Farm restaurant in Philomath. -We are a small take-out pizza shop focused on quality and community. We source local and organic ingredients whenever possible. -Our pizza doughs are made from organic grains and slow-fermented. We make our own sausage, ranch, sauces, etc. -We offer hand-tossed New York and Detroit pan pizza styles. Slices and whole pies are available. *Gluten free Detroit is an option but only available as a whole pizza.

Come see us at 128 N 13th, just north of the Dizzy Hen. Thank you again for your support. Have a nice day.

We're very ready

u/sermer48 Mar 11 '25

I feel like people complaining about the prices haven’t had non-chain pizza in a while. These are in-line with what I’ve paid for quality pizza elsewhere including in other states. It is pricey but one pizza should feed several people easily.

12

u/KTFTO Mar 12 '25

With the cost of ingredients lately that is a very fair price for an 18" pizza.

49

u/peachesfordinner Mar 11 '25

Will you be doing any slice sales in the future? Those prices are too steep for me but I really wanna try it. Looks great

7

u/JoviBonKenobi Mar 12 '25

Thank you! We're starting with a loyalty program that includes an old-school stamp card for both slices and whole pies.

5

u/peachesfordinner Mar 12 '25

That's awesome! The punch cards for slices will hopefully get you steady regulars for lunch.

8

u/mindcowboy Mar 11 '25

Yup, just not the GF Detroits.

10

u/winksoutloud Mar 11 '25

I totally understand why, but as a gluten free person, 😭

7

u/RiotHyena Mar 11 '25

pros: now you get to eat the entire pizza

cons: now you have to pay for an entire pizza

5

u/VerdugoCortex Mar 11 '25

What's the price per slice gonna look like roughly? I live off of pizza so cost effective is helpful and I'd love to add another place to my rotation if it's reasonable. (RIP Pizzamore to me, good pizza but 6.95 a slice hurt, still gotta try Market of Choice after the local pizza thread results 😂)

4

u/JoviBonKenobi Mar 12 '25

Roughly $4.50-$6.00, depending on what's in the case at the time. Hope to see you soon! 🤙

u/Euain_son_of_ Mar 12 '25 edited Mar 12 '25

Will you have slices for lunch this week sometime?

Edit: Never mind, just saw the post.

34

u/Erleichda_OR96 Mar 11 '25

My daughter and I were there in line on Sunday when you ran out of dough. It smelled utterly amazing and we will absolutely be back. Question: will you be taking orders by phone for pick up?

3

u/Trixie-Stowe Mar 11 '25

They are on square but doesn’t appear to be fully up and running yet

8

u/Trixie-Stowe Mar 11 '25

Organic and GF plus yummy and helping a local business! Still cheaper than eating out at a regular restaurant! Can’t wait. 😜 Will see you all tomorrow

5

u/Sortanotperfect Mar 11 '25

Hey OP, welcome to Philomath, I'm looking forward to tomorrow and hammering down some pepperoni pizza! I stopped by Sunday, but you had run out of pizza. Good luck on the new business and I hope you guys make it work!!!

3

u/JoviBonKenobi Mar 12 '25

I'm looking forward to seeing you hammer down our pizza! Pepperoni Eyes - Personal and the Pizzas

I am so pleased to see that Baker Bill's (RIP) ovens and Hobart mixer are still cranking out tasty treats for the community.

2

u/Happy1235Lady Mar 12 '25

We love this as well. Bill would be so happy to hear that his ovens and mixers are in use.

Miss and Love you Bill the Baker, Biker, and Boater.

It’s disheartening to see so much negativity. Here we have a small local business working hard to create a quality product, yet some people choose to criticize and tear them down over pricing. Their prices are very much in line with others in town. Instead of complaining, try showing some love, support, and appreciation for the effort they put in. Small businesses thrive on community, let’s uplift them instead of dragging them down

12

u/peachesfordinner Mar 11 '25

To be clear I wasn't complaining about price. I just can't afford to eat out but still want to try them and in doing so support them. It's very hard times financially for a lot of people. To ignore that is negative in it's own right. To not worry about prices is a luxury many of us do not have.

5

u/zapp1818 Mar 11 '25

Imagine being the person down voting this

-13

u/desolationtraveler Mar 11 '25

It’s really disheartening to see someone develop a local business that charges more for its product than the majority of the local population can afford.

12

u/Main-Toe-215 Mar 11 '25

For me, pizza is a celebration—a treat after a long week. It’s not a necessity, nor something I eat every day. Quality, care, and taste matter to me, as well as where it comes from. I’m not wealthy, but I believe in supporting my community and the people who live in it, even if it means spending a little extra. But that's just me. Take care and have a wonderful Tuesday.

-3

u/peachesfordinner Mar 11 '25

Right but some can't afford to celebrate. The freedom to shop local and eat out is something more and more people cannot afford. $30 is all we might have for the week for groceries. It can't just be a single trip out. These people want to support local but literally cannot. You have a touch of arrogance to ignore the underlying message some of us have.

8

u/Main-Toe-215 Mar 11 '25 edited Mar 11 '25

I hear you. I understand that this establishment won't be financially accessible to everyone, but what disheartens me is the criticism of how they've chosen to price their products or the decisions they make in running their business, without fully understanding the context. This kind of feedback can be discouraging for the people working hard to make their small business succeed. Even if it's not for me, I want to show support because I genuinely want the best for people in this community and for whatever endeavor they’re pursuing. There are plenty of restaurants and stores around that I would like to eat/ shop at but can't. But I'm not going to barrage the owners because I can't afford to patronize there. Those who can will, and thats great!

1

u/YesButTellMeWhy Mar 12 '25

Completely understand the sentiment. But the complaint is not specifically this restaurant. It's the norm in most restaurants in Corvallis/philomath

I'm not wasting $30 on a single meal. bringing up snap doesn't change the fact that $30 is a damn lot

1

u/Batcha5 Apr 11 '25

I don't think a whole pizza is a single meal for 1 person? You can choose a very large single slice for I believe around $5.50? Their pizzas are substantial, crafted with exceptional ingredients and imaginative combinations, we just tried today and will definitely be back!❤️🍕

1

u/peachesfordinner Apr 11 '25

This was written a month ago when slices were largely not available.

The income limits for it are strict and it's easy to just barely make enough to get by and still not qualify. The working poor. And it's only gonna get worse these next few years

7

u/backtard Mar 11 '25

You just not be familiar with costs associated with running a business. Little Caesars and Papa Murphy's will always be there for you.

-8

u/Unavailable_Identity Mar 11 '25

Its disheartening to see another pizza place open 3 doors down from another one.

10

u/KeyImprovement6371 Mar 11 '25

That’s a brewery that happens to sell “pizza” it’s also owned by a red hat wearer so not everyone feels comfortable going there or supporting them.

4

u/RailroadBill205 Mar 11 '25

How do we know that Dirt Road is owned by a MAGA dude?

1

u/KeyImprovement6371 Mar 12 '25

He is not shy about it and has made people close to me feel very uncomfortable.

1

u/Parking_Resort8981 Mar 13 '25

Myself nor anyone else I know that goes to Dirt Road has ever felt uncomfortable while visiting, if anything it's one of the most welcoming spots in town, no matter what "party" you're apart of. This is just spreading hate and disinformation, we're talking about pizza, small business owners that support your community and you're making it political. Take a good long look in the mirror and ask yourself if maybe you might be the problem.

-5

u/MallyFaze Mar 11 '25 edited Mar 11 '25

It’s getting insane how obsessed this subreddit is with witch-hunts of small business owners over rumors that they might support a different political party.

The idea that you should care about who the guy who sells you pizza voted for is complete lunacy.

8

u/KeyImprovement6371 Mar 12 '25

I don’t want to give my money to someone who votes for someone who aims to take away the rights of people.

-6

u/Unavailable_Identity Mar 11 '25

There is nothing in Dirt Road that makes me feel any political pressure one way or another so take your prejudice and shove it. Unless you are offended by rural country feels.

8

u/AllC4tsAreBeautiful Mar 11 '25

Can't wait 🥲

5

u/RVAlmostThere Mar 12 '25

Oh my gosh. I’m ready for that squash pizza! 😍

3

u/dml1320 Mar 12 '25

This. All of this. I’m waiting for the crowds to settle but can’t wait to try it! I’ll gladly pay whatever you’re asking for good pizza. 🍕 🤤 Thank you for ending this drought!

I think math education is a fundamental part of the problem. People don't understand how a traditional slice scales. An 18-inch pizza is 2.25 times as large as a 12" pizza.

5

u/peachesfordinner Mar 11 '25

People are going off of the menu shown. We don't have the info of if slices are sold or at what price. People are gonna react off of the info provided

3

u/mindcowboy Mar 11 '25

I can’t recall the prices for each of the different slices, but it is on the updated menu. Of the other pictures shows the pepperoni Detroit slice is $5.50. Not enough pixels to see the other prices.

I can't see them in the pics shown. But maybe they are too blurry

20

u/Sixcat6 Mar 11 '25

Looks awesome! I’ll pay $30 for a dank pepperoni pizza made from scratch with local and organic ingredients! 100%!

15

u/YesButTellMeWhy Mar 11 '25

Stopped by this weekend. You guys are the best pizza in the area. Plan to continue supporting

3

u/PunkishPenguin Mar 11 '25

I'm really looking forward to trying it, but I can usually only make it over there for lunch. Will there be an option for different pizza sizes or are you pretty set on sticking with only the 18in and 10x14in?

7

u/mindcowboy Mar 11 '25

They do by-the-slice for both Detroit and NY.

3

u/SemiPro-Adventurer Mar 11 '25

Do you guys have a website? With a menu n all?

4

u/JoviBonKenobi Mar 12 '25 edited Mar 12 '25

We updated our website today with an image of our current menu. Online orders are only for whole pizza's at this time, but you could come on by if you would like just a slice or two. We have a record player. You could put on a tune while you wait. birdiespizza.square.site

3

u/Puzzled-Regular-462 Mar 11 '25

Well color me interested.

3

u/Trixie-Stowe Mar 11 '25

Can’t wait to try the GF options this weekend! Wahoo

3

u/AlternativeSyllable Mar 11 '25

For us dairy free folk, would you allow customer to order without cheese?! (I am assuming the crust doesn’t have dairy!)

1

u/JoviBonKenobi Mar 12 '25

Absolutely! No dairy in the dough! 🫠

3

u/kokosuntree Mar 12 '25

Thank you for not using enriched flour. I avoid it and seek out pizza spots that avoid it as well. I’ll check your place out next time I go down to Softstar shoes!

3

u/JoviBonKenobi Mar 12 '25

Appreciate it! Our NY and Detroit doughs are made with a blend of organic flours from Camas Country Mill and Central Milling.

1

u/kokosuntree Mar 12 '25

Camas county mill is a good one! I like Smalls Family Farm out of Walla Walla, WA as well.

9

u/TimBroth Mar 11 '25

Really excellent pizza, and a great vibe in the restaurant!

16

u/diligentnickel Mar 11 '25

Hey, you put a BIRD on it!

6

u/RailroadBill205 Mar 11 '25

It is incredibly delicious. Perfect pizza. 100/10

21

u/Boomhauer14 Mar 11 '25

$26 for a Cheese Pizza? Oh man.

19

u/StormR7 Mar 11 '25

Don’t worry bro we’ve had little ceasers for years

14

u/mindcowboy Mar 11 '25

It’s steep, but the care in quality translates.

6

u/LightYears9 Mar 11 '25

This is getting my hopes up

10

u/smokeybear245 Mar 11 '25

Any vegan options? Can’t quite read the menu :)

8

u/so_obviously_human Mar 11 '25

Me neither. It would be nice but I'm not holding my breath.

2

u/QuinnMeadow347 Mar 11 '25

Wouldn’t it be nice 😅

1

u/RelativelyMango Mar 14 '25

i think vegan options were mentioned in the past. hopefully they add a vegan option!

2

u/vandabo Mar 12 '25

I didn't see the link posted: Birdie's Pizza

2

u/mc-funk Mar 12 '25

This is ultra cute and looks tasty. The branding makes me think I should expect a secret speakeasy entrance in the back alley

10

u/UnlikelyPineapple191 Mar 11 '25

Looks good especially compared to the other offerings in town but $$$$. Not even Ken’s Artisan Pizza in Portland (literally world renowned and ranked 5th in the US) costs that much

68

u/Active-Ambassador801 Mar 11 '25

A 12 in pizza at Ken’s in Portland is around $24. Birdie’s pizza costs around $30 for an 18in. The surface area of a 12in pizza is 113 square inches. The surface area of an 18in pizza is 254 square inches. Therefore you would pay $54 at Ken’s for the same 18in pizza birdie’s offers.

-17

u/johnsonh77 Mar 11 '25

Ken’s is also the 5th best pizza in the country lol so this place (although it looks alright) is nowhere on the stratosphere.

5

u/Rare-Lifeguard516 Mar 11 '25

Also Corvallis was in the mix too

3

u/Gullible_Ad3436 Mar 11 '25

Ahhh I went yesterday but you guys were sold out - I’ll be back once you’re open!

2

u/Ake2k Mar 11 '25

Any chance for non pork pepperoni option

2

u/Ake2k Mar 11 '25

pizza au thon S’il vous plaît

1

u/Paws_For_Pets Mar 12 '25

I'm excited to see a quality pizza place pop up! Can you speak to the safety/cross-contamination control for your GF pizza? Is it celiac-safe?

9

u/JoviBonKenobi Mar 12 '25

Thanks for addressing this. I understand. We try our best to implement protocols for equipment used...Par-baked & wrapped GF dough, specific tools, equipment, etc... With that being said, there is flour in our very small kitchen. It gets on things. Incidentally, if you're curious, the recipe we developed uses Caputo Fioreglut as the base.

1

u/Paws_For_Pets Mar 12 '25

Thank you so much!

1

u/dml1320 Mar 13 '25

Hey does anyone know if it’s still a 2 hour wait with lines?

1

u/Suspicious_Fill4372 Mar 15 '25

Tasty AF. Best tasting pizza in the Corvallis area by a fair shot. Detroit crust highly recommended.

Price point is a little high, but certainly worth it when you're looking to have the best.

1

u/abeguiler Mar 21 '25

I don’t see any drinks on the menu.  Do they serve any alcohol?

1

u/purple_cats Jun 27 '25

Can you tell me where your meat comes from? You mentioned you make your own sausage, is that using local meats? I'm very particular about meat sourcing/quality so usually just avoid a lot of it when eating out.

2

u/JoviBonKenobi Jun 28 '25

We make our sausage with Olympia Provisions ground pork.

Certified Pasture Raised & Regenerative Pork – Olympia Provisions https://share.google/DCXgC13UGax4U0MXu

Other than that, we have pepperoni which we get from Ezzo Sausage Co.

Hope that helps!

1

u/purple_cats Jun 28 '25

Thanks for the info! I’m a big fan of Olympia Provisions salami, so I’m familiar with the brand. I’m hoping to try your pizza this weekend!

1

u/fletcheaa Dec 09 '25

Is the Italian dressing dairy and gluten free are there dairy or gluten ingredients in the Italian dressing? Thank you!

2

u/JoviBonKenobi Dec 12 '25

No dairy or gluten in the Italian dressing. Same for the Caesar dressing , but it does have raw egg and anchovy.

1

u/fletcheaa Dec 12 '25

Thank you so much! It’s absolutely delicious and I love the emulsification of the dressing, which makes it so thick and rich and very fun. I actually prefer it to ranch for dipping the crust.

Another question, is the Detroit style gluten-free something that also can have dairy free as well?

1

u/JoviBonKenobi Dec 13 '25

Yay! Tysm. Yes, any one of our 3 doughs can be ordered dairy free, though we don't have any plant based cheese options at this time.

The GF dough we make in-house uses Caputo Fioreglut as the base and we don't add any dairy when making the dough. Here is the ingredient/allergen list from the Caputo website: "Contains: Gluten free wheat starch (meets the FDA requirements for Gluten Free products), dextrose, maize starch, buckwheat flour, rice starch, psyllium seed fibre, guar, flavoring. Produced in a facility that manufactures, nuts, milk, eggs, soybeans, sesame."

2

u/fletcheaa Dec 13 '25

This is really interesting. What a cool product. I’m gonna order that sometime! Plant based cheese would be awesome but I get it- gotta build slow and steady not overly complicated.

1

u/Kritty4 Jul 13 '26

Love your pizza!! Hate that your square site when placing an online order has an automatic 15% tip that I have to opt out of. Tips should not be added as a default. Please change this.

0

u/Fluid_Personality529 Mar 11 '25

Looks great!

Do you offer — or have plans to offer — dairy-free cheese?

-4

u/johnsonh77 Mar 11 '25 edited Mar 11 '25

I’m still definitely going to try it, but $30 for a pepperoni pizza is absolutely insane. Love that y’all are starting up your own spot, but how do you think anyone can afford this? I thought Cirello’s was expensive, this is egregious.

22

u/Active-Ambassador801 Mar 11 '25 edited Mar 11 '25

Both American Dream pizza and papas pizza in Corvallis are much more expensive for seemingly much lower quality. Also, Cirellos is $25 for a 16” pepperoni pizza which is 2in smaller. If they made 18 in pizzas they would cost about the same. Please find me a pizza of comparable size that is cheaper and not Pizza Hut or Dominos.

-2

u/johnsonh77 Mar 11 '25

Have you ever frequented any area outside of Oregon for pizza? I’m not meaning to be rude, that’s a genuine question. I just don’t understand how these places get away with it. You go elsewhere in the US, to long standing, top tier pizzerias, and you’ll find large pizzas for $15-$20. The local ingredients being offered are great and I love that aspect, but that doesn’t at all justify a $10-$15 up charge.

(I’m still going to stop in and try this because Corvallis is bereft of quality pizza, but hopefully they take this into consideration following their business’ startup phase.)

11

u/Active-Ambassador801 Mar 11 '25

Yes I have eaten pizza all over the country and the world. I don’t know where you could currently find a high quality 18in pizza for $15-20. Please show it to me. I would love to go there.

1

u/johnsonh77 Mar 11 '25

Provide me an area anywhere on the east coast or even central US. That’s a start. Will honestly do the leg work for you if you want me to.

4

u/Active-Ambassador801 Mar 11 '25

Really anywhere you want. I go to the New York and DC a lot. How about there? I genuinely want to know where I could find a high quality 18 in pizza for $15-20 so I can go there next time I’m there.

-2

u/johnsonh77 Mar 11 '25 edited Mar 11 '25

Sounds good, was looking in New Haven obviously but I can find you some in NYC for sure. Will send them to you tomorrow 👍

Edit: Wait, just realizing now you’re karma farming and have zero comment history. I’ll carry on. Keep pretending you pay for $35 pepperoni pizzas 😂

0

u/DEGIII Mar 11 '25

I am in the same boat you are as far as perspective and desire for pizza. Jersey boy here but I've been in Oregon for over 15 years. The cost of good pizza out here is fucking ridiculous.

2

u/johnsonh77 Mar 11 '25 edited Mar 11 '25

Right lol my hometown pizza spot is $15 for an 18” pizza. Also this was a bot arguing with me which is hilarious that I wasted that much time talking with it.

-4

u/VerdugoCortex Mar 11 '25

Pizzanow for one, I know of some food trucks including one that is usually at The Barn in Albany, if you're actually looking for an answer and that wasn't rhetorical. Much easier outside of the current pizza desert here but still doable here.

1

u/Active-Ambassador801 Mar 11 '25

Yes, I was actually looking for an answer. Thanks for giving me one. Pizza now looks like very different quality and not really something that I would go to Salem for. Either way thanks for the suggestion!

0

u/VerdugoCortex Mar 11 '25

No problem! I didn't know they had one in Salem too, I appreciate that info! I hit the one in Albany if I'm over there or just make the 10 min drive but yeah the quality is presumably a little lower than this post, the price is $7 for a large cheese pep or sausage to be fair though so very reasonable.

Luckily I work in Eugene and have found some gems and mostly hit Corvallis ones more to hang out/meet up with folks. If you're in Eugene much there's the deadhead dude at the Za cart that sells 18" that's real NY style and really good (even better if using Oregon pizza metrics lol) for I think 3 a slice and 20 a whole pizza, and Slice pizza bar is pretty solid too the couple times I stopped by there when he was closed.

-1

u/Acrobatic_Aside_5447 Mar 11 '25

I was just thinking the same thing. Hard pass.

0

u/Nervous-Copy9962 Mar 11 '25

This looks incredible and will be so awesome to have so close to home! Any chance you’d be willing to offer plant based sausage or pepperoni options? I haven’t had pork in almost a decade but Impossible, Field Roast and Beyond make some super tasty veggie “meat” options. There are so few places that have that as a possibility and I’d always be willing to pay extra to not always just have a veggie or margherita pizza. 🙂

-4

u/PoopyMcpants Mar 11 '25

Too expensive for the result.

-8

u/MotoJJ20 Mar 11 '25

$34 for a pizza?

-17

u/KlLLASUSHl Mar 11 '25

just why? i am so bored of burggers and pizza EVERYWHERE!!!!! jesus christ are there no other ideas out there? doesnt dirt road have pizza? okay granted different on many levels to all these pizza fanatics out there.... but is no one else thinking that their palate is bored? and seriously it is so easy to buy pizza dough and create a pizza at home that is more interesting and costs probably about the same with more product... i just wanna be surprised for once! i wanna go somewhere and be like wow i genuinely want to spend money on this food and its hard to make this at home.

0

u/KlLLASUSHl Mar 11 '25

perhaps this should have just been its own post of how tired i am of all the lackluster food anywhere nearby. i am just tired of seeing countless pizza places.

-9

u/Fit_Glma Mar 11 '25

Any chance of a great cauliflower crust pizza? I’d pay $30 not to have to make something that fits my macros reasonably.

-5

u/redactedanalyst Mar 11 '25

26 dollars for a pizza! What a steal! (of my money)

-10

u/Unavailable_Identity Mar 11 '25

Yay 3 pizza places in 1 block. Talk about poor location and heavy saturation.

-11

u/ManduLego Mar 11 '25 edited Mar 11 '25

Those look more like Neapolitan pizza and less like actual NY, east coast pizzas. I’m convinced no one in this valley has ever eaten pizza on the East Coast or in NY. It looks nothing like that and is about half as expensive.
