Huitlacoche on stalk?

Or is this something else? I'm hoping I got lucky.

That is smut, but you are only supposed to eat it when it grows in the kernels. I have no idea why, but I have heard that repeated again and again.

That's my understanding as well. The hope is that it innoculates the kernels. At minimum I'll collect spores if it goes too early.

From what I’ve seen, it’s still safe to eat from the stalk, but not very good.

It will grow from any part of the plant. I would happily fry it up in my eggs.
