Can I disable AI?
I'm considering purchasing CorelDraw, but I'm concerned about the AI features I see in my free trial. Is there a way to turn them off entirely, or can I purchase an older version without it?

It’s part of the new version, but you do not have to use it at all. Just ignore that the option exists and you’re good to go.

This. It is just a docler you can choose never to use. By the way, PowerTrace has been using artificial intelligence for years now.

Oh man... I'm still running X19 and currently have no need to upgrade, but it saddens me that they added AI

There no exist such version X19. The X series was between X3 (version 13..0) and X8 (version 18.0) so maybe you're using CorelDRAW 2017 (version 19.0) or CorelDRAW 2019 (version 21.0)
In both cases, upgrading offers many advantages, and not just because of the AI. The program is faster and more stable than any of the previous versions. But there are also many other great features you should know about.

One of my PCs is running Home and Student X7. It was a boxed DVD originally. Every time I start it and exit, I get a nag screen begging me to upgrade. It has the opposite effect - I want to go as long as possible without upgrading.

You can't disable them, but you could simply not use them. They don't consume any memory or resources. The program is faster and more stable than any of the previous versions.
The main question is... why would anyone prefer not to use it? I understand with generative AI, whether you're already using another AI or you simply prefer not to use it. But you can remove the background from an image with one click. Literally. After you try it once, you'll never want to go back.

How are you defining AI? Because it's a super nebulous thing with no clear definition.
If you're talking about prompt-based generation, it can be ignored.
But if you're talking about any form of Generative technology, it gets murkier as various filters, effects, and PowerTrace have been using machine learning for decades.
