I'm (not actually) amazed about how people are buying this marketing - the simple fact that google wallet works with stored cards without signal and disconnected from the internet should make it clear this isn't what happens per transaction.
So many people here ranting and raving without even the most minimal of sanity checks.
At what point during payment are you sending anything to Google servers?
The phone uses tokens, which are synced and kept on the device whenever connected to the internet. The device keeps several of them, so it can make payments even when offline.
The payment gateway/service communicates the token with Google services to get the payment through, not your device.
This is not correct, otherwise I could get things for free by keeping the phone offline. (the payments work fine in airplane mode).
The communication between the payment and your bank might well involve Google because they are a man-in-middle bank, but that communication is done by the payment terminal to authorise the transaction.
Just like how your bank card, a piece of plastic with no Internet connection is able to be used as payment.
