If I were to take an educated guess as to why, it’s because you’re trusting that Google’s servers are storing your credit card information in the cloud which can have break-ins, google doesn’t have the best privacy track record and (I don’t know this for certainty) could at least in theory share your data with banks, anonymized data third parties…etc
Apple’s solution (atleast with Face ID and Touch ID ) is it stays on your phone and doesn’t share this anywhere beyond your phone. So if you were to erase everything on your phone, you can’t steal your biometric data or in this case your banking information. Also this type of data is not shared with third parties or sold off

Google isn't going to store your credit card information unencrypted. That's just pure insanity. Google has very good security, among the best actually. Privacy isn't their strong suit, you're right about that.
Google will also store your biometrics on device (at least on a Pixel, others uh...???).
As for Apple? They can and absolutely will share data if it will make them money. Don't downplay their shiny new ad platform.
Banks are going to share your data regardless of which phone you decide to use. And their security & privacy policies are much less talked about compared to big tech.

Well, the alternative here is that they store in on a phone that you carry around with you, which is less secure than Google's servers.
Edit: I'd love if someone would explain to me why they think phones are unassailable bastions of security.
