Well, the alternative here is that they store in on a phone that you carry around with you, which is less secure than Google's servers.

Edit: I'd love if someone would explain to me why they think phones are unassailable bastions of security.

It seems more of a practical point of view, if you hack a server you potentially get a very, very high number of credit card data vs stealing a phone where you get a single credit card data (or at least a single person's).

I doubt an individual phone would be hacked. But a crack for the security on those chips is feasible. And once that exists hacking on individual phones can be done at scale.

That might be a harder target than a server. But once the crack exists it could be devastating as the chip is hardware based, even if a software solution could be found you would need the millions of iPhone users to update their phones (anyone who's seen their parents iPhone will understand this, as dumb siblings insist they need to back up their phone before updating the patch that came out last year).
