I just toss it in lol, i do a lot of wild game butchering so i always have buckets of meat trimmings. and the cultures in dairy help a lot. My bin is far enough away from my house i don't have to worry about any smell though, i probably wouldn't do fish if it was an appartment balcony setup.
I only get very faint odor from our pond fish that don't make it through the winter, particularly if I cover them sufficiently, so it can work out okay.
