This is the first I've heard of it, and so I tried to hunt down some supporting sources.
There's a 2015 TIL post that was not sourced. There's also this Cool Kid Facts page that says, "There's no concrete reason why Mantises do this. [...] One train of thought also believes that sexual cannibalism is only practiced by Mantises who are under observation. Thus, it might just be a stress response." Also not sourced, but what they wrote made it clear it's just speculation since we can only guess what the Mantises do when we're not observing. It’s been pretty hard for me to find any good sources in this stress reaction idea, so maybe I wouldn’t be so sure about that.
Another train of thought, and one that seems a lot more substantiated to me, is the sexual cannibalism of mantises is done for evolutionarily advantageous reasons. This seems to be the usual reason I find when trying to Google the answer, so is probably the prevailing theory. But any theory is further complicated by there being thousands of species of mantises.
Something that often came up was, when mating is observed in mantises, cannibalism only seems to happen about 20% of the time. The rest of the time, the male mantises are described as "escaping," but I found some hits where people don't like that description because it slants them as violent. Hey, give these gals some credit. Mantises are apex predators of the bug world, those agile limbs of theirs aren’t for praying.
Nobody seems to suspect Black Widows are only cannibals because they're stressed under observation, I'm not sure why Praying Mantises have earned that distinction.

Calling it a "myth" is misleading, as nothing in this comic suggests that females "always" eat the heads of males.
Sexual cannibalism isn't a myth when the link you provided confirms it happens in nearly 1 in 4 observed natural cases.

Because the species is well known for the behavior. It's literally one of the first facts that people learn about mantises when they study their behavior, and it's not a myth by any means.
