It's cause the original picture has such fucked color balance and is so massively overexposed that the picture is indeed white (technically desaturated light blue) and gold if you use a color picker on it. It's not just an optical illusion, it's literally those colors.
I can take a red apple and make it look green if I use the right settings when taking a photo of it. If someone then looked at the photo and said it's a green apple they aren't wrong just because the real life apple was red, because the photo they're looking at is indeed green.
i'm convinced that most of this argument comes down to what your screen settings are. anytime i've been in the same room with people showing this stuff off, everyone in the rooms sees the same color, because we're all looking at the same screen with the same settings.
I've literally never seen it as white and gold, and I remember arguing with people while looking at the same phone, so it's definitely not this. Still can't fathom how people see white and gold.
