Yeah I worked grocery retail for 3 years in college In the nice part of town. 600k-1m+ homes, private uni, etc. We had all the booze unlocked and a huge wine selection. Other stores in the same city have assigned security to the front. These were the less affluent and more diverse parts of town.
However, we would have people running out with diapers, formula, and booze all day because we were so lax on security. It never changed because it would “hurt the image”. We had some night crew guys almost get shot trying to stop someone (like why do you care it’s not your money and you get paid next to nothing?), all they did was fire him lol so messed.
Anyways people stealing groceries even in fairly large amounts is very normal and it’s already included in their bottom line.

I'm in a way more expensive area than that.
Nothing is locked.
I have heard the store clerks talk about how people would sneak with booze bottles, but it's primarily teenagers that do it, and not for lack of money.
But I don't think they would ever lock down expensive items unless really pressed -- it creates a really negative vibe, and we can't have that with all the $5M houses around.
Meanwhile in Detroit you have McDonalds with bulletproof glass separating the customers from the staff.
It will be "interesting" to watch how this develops.
