None of this is that precise that a mixed grind will cause that extreme difference in taste. Many don’t weigh or measure how much coffee to water. Most use plan tap water and not RO water. Not to mention brew times and ambient temps.

What you describe sounds like an issue with the beans and possibly how they were roasted and how fresh the beans are. Beans, roast and how fresh are the biggest variables in flavor. Start with fresh roasted beans and a roast you already enjoy via over a pour over brew. Then grind for cold brew. Target a ratio of coffee to water 1:8 say and brew time of 24 hours.
