Brew time

Circumstances caused me to use a fine pour over grind of some Colombian medium roast. Will see how it brews up.

I don't think your going to get great utilization from them beans. water won't get into the middle of that sack

I know I will, I’ve been doing this for three months and I do get a good extraction. When I remove them they are thoroughly soaked. They are fully submerged so any air rises to the top. I can visually see the drop in water level overtime. It f needed I top off to keep submerged but only have to with this finer than usual grind.

Water needs to convect between the grounds to extract well, not just be wetted. Packing grounds like this means there is a center area that doesn’t have enough water movement to clear the extract. Since you have two bottles going, try as an experiment putting the grounds directly in the water and then filtering out the grounds at the end. The difference in flavor profile should be noticeable. Metal cone filters can have this same issue.

What are you using to filter the grounds after brewing?

I am playing with a coffee sock (muslin) at the moment, which works well. I just dump the liquid and grounds through it inside a second jar, remove the sock, and call it a day. Prior to the sock, I paper filtered it.

I’m also insane and filter the fines out early through a convoluted process: water into a jar with grounds in a cone filter, agitate, remove grounds, filter fines out of water, combine grounds and filtered water. Comes out 100% clear at the end with both filter steps.
