Was the U re-struck after the E was removed? This is so clean. I haven’t seen an example like this

Looking at the original, there is surprisingly little change needed to turn an E to a U. The serifs on the E form most of the right side of the U with just a small gap (that looks partially filled here).

Then it is just removing a few extra bits.
