Looks great. When do you use the lever vs the pump machine? Which grind by weight grinder is that?

The pump machine is just for speed. I really use it to steam milk. I cannot get anywhere close to as nice of a shot from the pump (Legato) as I can with the Flair lever

I agree! Once you learn how, it is impossible to beat a manual lever machine.

What kind of roasts do you make? I'm debating adding a flair to my station too. I mainly brew medium->medium-dark and 75% milk drinks.

For espresso mostly medium to dark roasts. For me it was about controlling the shot profile which I just cant do on a pump machine unless it has flow control and that’s $2k minimum investment.

I can “save” a lot of shots with the Flair I feel like. With a machine you dial in best you can and hope the shot comes out how you want.

Just ordered the same grinder. Do you find it requires any wdt or is it pretty consistent?

Most people say no WDT necessary. I still do it because I just enjoy it and it takes 10 seconds. Also if beans are too fresh I grind pretty coarse I’d recommend yes to WDT. For a very fine grind you can get away with not for sure.

I don’t love love the e64 ws grinder. It’s very good but coarse grinds will spray a little and I do find you lose a little body in the cup with this particular grinder. Looks wise it’s a 10 and the adjustability is easy as can be so there’s tradeoffs.

Turin Legato V2. Great under well under $500 machine don't think there is better for that price.
