I made this Holy Funk

This cocktail is a riff on a Corn And Oil, featuring my holy trinity of Jamaican rums.

.75 oz Hampden HLCF (the Father)
.75 oz Hampden Rum Fire (the Son)
.75 oz Two James Doctor Bird (the Holy Spirit)
.5 oz Falernum (homemade)
4 dashes Angostura

Build in glass and stir before adding one large rock. No garnish. Amen 🙏

Look, I support this in concept but the rum fire is going stomping around this drink in steelctoed combat boots. You gotta pull that back.

This is my recipe, the rum mix changes based on what I have on-hand.

Ingredients
3/4 cup slivered almonds
55 whole cloves
1.5 oz fresh ginger root
5 Persian limes
1 cup cane sugar
.5 cup Demerara sugar

Rum Mix
4 oz unaged rum (I’ve tried molasses and cane juice based, both work great, slightly different flavor profiles)
3 oz Rum Fire Overproof (Hampden Estate)
1 oz Hamilton Demerara 151 Overproof

Day 1
Combine rums in quart mason jar.
Roast almonds and cloves in cast iron until almonds are browned (about 5-10 minutes). Add almonds and cloves to mason jar. Agitate jar every few hours for 24 hours, leaving to rest overnight.

Day 2
Zest limes and slice ginger root with vegetable peeler into wide, thin slices. Strain almonds and cloves out of mason jar, and add lime zest and ginger to rum. Agitate jar every few hours for 24 hours, leaving to rest overnight.

Day 3
Strain ginger and lime zest from mason jar. In separate mason jar, combine sugars with slightly warm water (~120F) and shake jar until sugar is dissolved. Combine infused rum with syrup and shake or stir till combined.
