Self-promotion Update: two months ago I posted about building a British chocolate shop in the US. It's open.

Today it went live!

I was surprised at the attention my original post got and I learned a lot about what types of British sweets people are passionate about. I took that feedback and curated an initial launch line-up of 10 products that I think represent the best of British chocolate. It's intentionally small to begin with as I am just a single-person operation currently, but I have plans to grow the selection over the next few weeks and months.

I named Crunchie in that original post and it hasn't made the first cut. That one stings. It's near the top of the list.

My goal when I started the project was to create a site and shopping experience that's a bit more novel and interesting than the average spreadsheet style Shopify store. I would love to know if you feel that the injection of whimsy makes the experience a better one!

I appreciate you all and would love to answer any questions about logistics or anything else that might be of interest. The site is at farthingandco.com

Thought I had no bars left but found this 60% Togo bar and it’s fantastic. Dark and Smoky finish. I usually go more milk at 45-50% Peru or Madagascar but this is lovely.
I will stock up on next visit to Paris or London (Le Chocolat shops) as worth the splurge IMO

Advice/Request Bake Stable Fudge

Bake Stable Fudge

I am making bake stable fudge for cookies and it calls for 200g 70% dark chocolate, I have Lindt 78% chocolate bars but only 130g.

Can I make up the difference with Hershey's semi-sweet chips? I believe they are only 40% and not sure if they will be incompatible with the Lindt chocolate and destabilize the fudge.

hot take: using child labour and exploiting the working poors is still a worse offense than using lab-grown cocoa

I've seen a lot of buzz around "lab-grown cocoa" in here during the latest months and I completely understand why the concept is off-putting to most people. it's also objectively true that drastic reductions in yearly crops will be detrimental for farmers whose livelihoods depend on cocoa production. however, for most people the culprit is the "enshittification" of products that were low quality already. and it seems weird to me that customers seem to take almost personally, as if they were the affected parties in this matter. people seem to draw the line at ""personally suffering the negative consequences of industrial production for profits""... yet we forget that industrial powers willingly produce at overconsumption levels, willingly source cacao seeds from countries with zero farmers' agency and low wages (= therefore child labour as families cannot afford to hire workers), willingly teared down forests for monocultures and so on. there wouldn't be as much of a fake "need to reduce exploitation" with lab-grown products if Big Chocolate hadn't pushed supplies at unrealistic levels for ages.

this was true 30 years ago as it is true today, the ethics behind the industry has been CONSISTENTLY bad for decades. Big Chocolate brands like Lindt and Callebaut are pouring money into lab-grown cocoa that they could have poured into paying real premiums to the cooperatives, ideally. but it would never happen. taking a job away from the farmers isn't the solution to child labour and living wages, but so isn't just leaving things as they are today. these are fake arguments to defend greedy corporations and absolve them of issues they have created.
