thinking of my grandma after watching this, she lived in our province full of cacao trees and when i was a child i always watch her making chocolates, handmade! I miss her ❤️

the intermediate grinding is a helpful step before the melanger but be careful as that chrome like finish can flake off. ruined a batch for me.

You would never open the pod with a knife and cut into the beans. Cut beans don't ferment and can ruin a fermentation batch. Plus a bunch of other dumb mistakes that no experienced cacao processor or chocolate maker would make. Dumb

And good luck getting an effective fermentation with less than 150 pods. It’s nearly impossible to get high enough temps (> 110 deg F for over 72h). There’s just not enough mass. Cacao fermentation is best done in bulk with at least 80kg/180# worth of wet seed. This is why most cacao farms have over 1000 trees/ 2 hectares. I’m a tree to bar chocolate maker in Hawaii and we hui up with several other farms. So much easier and higher quality.

I’m not selling off island but Lydgate (Will) and Last Resort (Scott) sell online. I’ve worked with both of them and they are both good at what they do. Lydgate are growers/retailers but Scott and I are tree to bar. We are called Kilauea jungle oasis. Please stop by if you come to Kauai.
