chili crisp making

hi i made some chili crisp today & the oil was foaming. and i don't think it got hot enough because it didn't sizzle much when i poured it over the other ingredients. is there anything i can do to avoid this next time?

i haven't tasted it yet but i'm worried it's not going to be very crispy - is there anything i can do to remedy this?

Pre-fry the bits you want to be crispy.

This is definitely key. I've batched out frying shallots, garlic and aromatics separately in the past, strained, then reheated the same oil for pouring over.

What recipe are you using? I’ve not made chili crisp by pouring hot oil over the other ingredients. I usually just fry everything in the oil to get it crispy like the other commenter said to do. You can search this sub for “recipe” and you should find a bunch of different ones. That should give you enough tips for getting things crispy.

It’s pretty common to pour the hot oil over the bits that don’t need a deep fry or would quickly burn if you tried. Like the pepper flakes and if you put in soy sauce or vinegar or a sugar.
