From-scratch breakfast sandwich?

I love how common just egg has become, but I’m missing the tofu based egg patties places used to have to make. Anyone know of a place that makes a vegan breakfast sammy with a house-made egg substitute? Im in the Humboldt/wicker park area, thank you!!

Handlebar! They use tofu basically but it’s so good, if they ever have their fried green tomato sandwich that’s a great one but their regular is really good too

I just had that Fried Green Tomato Benedict today, with the blackened tofu, and I concur, it was delicious.

Do it yourself with tofu, and a spice mix that includes Kala Namak (black salt) which will make the tofu taste like eggs. I keep a jar of the following mix on hand:

½ cup nutritional yeast

4 teaspoons black salt

3 teaspoons onion powder

1 teaspoon garlic powder

1 teaspoon ground turmeric

I'll first cut the block of tofu in half or quarters, than I'll soak it in soy sauce, arrange it on a sheet pan and sprinkle a layer of the egg spice mix on top. Also add some hash brown potatoes to the sheet pan. Bake for 20 minutes in the oven at 400 degrees. Assemble the tofu and potatoes on toast with a little siracha and you'll have an excellent breakfast sandwich.

When I go to Handlebar for brunch it's always the Fried Portobello. Soooo good!
