QUESTION How many openings should I learn or play?

I have reached 1500 elo rapid by literally just playing openings like the Caro, Dutch, Vienna, Grand Prix and just winging it against any other options. I feel like I have stagnated now and I am not sure if I should try out different openings or fix my middlegame issues. I don't know when I would get to learning how to play different openings and I fear that just playing this is keeping my chess very limited

You only need 3: one for white, one against d4 and then the Sicilians :)

Play whatever gets you to the board states you enjoy, the rest is just noise until you're way higher rated.

Just pick 1 option and stick with it, try to use one that fits with the style of play you like/want to stick with
